Cheese Steak Sandwiches

Another great way to use up that frozen cow in our freezer--cheesesteak sandwiches! These turned out really well...and pretty simple, really. We felt that if we were served these at a restaurant, we would be quite pleased!

Cheese Steak Sandwich
from everyday foods

2 rib-eye or eye-of-round steaks
salt & pepper
oil
onion
12 slices provolone cheese
6 hoagie rolls

Slice slightly frozen steaks very thinly against the grain and season with salt and pepper.
Slice onion and cook with 1 teaspoon of oil until browned and beginning to soften.
Cook steak until just browned.
Top with onion and cheese and cook until cheese melts.
Transfer to toasted hoagie. (I brushed mine with olive oil and garlic before grilling)

Oven Ham Sammies

I've made a loaf version of this type of thing before, but this was definitely easier and I really liked the taste of using the King Hawaiian Rolls. They are a cinch to prepare, can be made ahead of time and I would probably double the recipe next time because everybody loved them!

Oven Ham Sammies
adapted from tasty kitchen

8 oz deli ham
6 slices swiss cheese
1 package King Hawaiian Rolls (12 count)
5 T melted butter
2 T finely chopped onion
1 t poppy seeds
1 t ground mustard

Slice rolls.
Fold one piece of ham and place inside roll. Top with half a slice of cheese and replace top of roll. Continue with rest of rolls.
Mix remaining ingredients and spoon over sandwiches.
Let set for 30 min - overnight.
Bake at 350 degrees for 15.

Pumpernickel Pastrami Panini


Saw this recipe on a Food Network show and thought it looked good enough to try.
It combines apples and onions and sharp cheese and pastrami and pumpernickle. Interesting combo, but we all really liked it. Even Isaiah ate it up.

Next time, the only thing I would change is to omit the rosemary from the dipping sauce.
