Menu Monday

Here's what's on the menu for this week.

Perch/carrot risotto/veggie
green chicken curry
chicken enchiladas/chips/salsa/fruit
asian beef skewers
apple pancake/eggs/oranges

  1. After a few weeks off of menu planning, I think I am back. Thanks for your ideas. This is what I am planning (or have already had, as it is Tuesday):

    Chicken/Pesto pasta
    Stromboli/salad
    Vegetable Stir Fry
    Spinach Cheese pasta
    Jesse's Chili/Cornbread
    Leftovers

    I like your baked taco idea and hope to incorporate it next week. Have you used corn tacos for that?

    I don't think I have used corn tortillas for it, but I would think it would work. It may get a little chewier than flour does. Maybe you would want to put the extra tomato sauce on right away to keep them moist? Let me know if you try it and how it turns out.
